“CROISSANTS AU BEURRE” Recipe

The wait is over here you are the "croissant au beurre" recipe, made by David Progress Electric modular ovens and David World Monobloc oven.

Ingredients:

  • - 350 gr of flour 00
  • -200 gr of butter
  • -15 gr of yeast
  • -3 eggs
  • -50 gr s of sugar
  • -water qs
  • -salt to taste

Preparation

First, mix 150 g of cold butter , cut into small pieces with 2 tablespoons of flour. Form a ball and place it in refrigerator.
In a cup half full of warm water dissolve the yeast, pour it on the flour arranged in a mound on a work surface and begin to knead. Add 2 eggs, sugar, the remaining butter and a pinch of salt. Knead the dough until it is smooth and elastic. Consolidate it and roll up with a food film letting it chilling for a night. The day after resume the dough , lay them on a floured surface and roll it by a rolling pin.
Put the cold butter in the center of the stick and flour that you have cooled down and close the edges of the dough. Work the two compounds and roll out again with a rolling pin. Fold the dough , with a plastic wrap and let it rest in the fridge for a quarter of an hour.
Roll out the dough , roll it out again , shut the door and let it cool in the fridge for another 15 minutes. Then repeat the process.
Now you can roll out the dough and cut into triangles with the help of a wheel food cutter. Roll up each triangle to give the typical shape of croissants and leave to rise in a dry place for at least two hours. Beat the remaining egg yolk and brush on the surface of all the croissants so, once cooked , they become golden brown . Lay on a baking sheet covered with parchment paper and cook in your electric oven Monobloc or David Progress modular oven or David World oven for about 20 minutes at 180 ° C. Et voila!
