Perfect to accompany a good coffee or tea with your friends, the Èclair in recent years have earned a new place among fans of French pastries. Born during the French Renaissance, these stuffed sweet have been synonymous with pastries in the most general sense. A crispy pastry filled with chocolate, cream, custard or coffee pudding, Èclair contains all the flavour and atmosphere of the capital of romance Paris. Since then the fillings have been enriched, broadening tastes and conquering every palate. Forni DAVID has chosen to tell the original recipe and allow everyone to enjoy a good Èclair with friends. Thanks to David Progress Electric Modular Deck Ovens and David World Single Chamber the cooking will be perfect and each Èclair will be ready to welcome the most delicious toppings that you could possibly want.

Ingredients

For paste choux:

  • - 210 g of water
  • - 170 g of whole eggs
  • - 90 g of margarine
  • - 90 g of flour weak
  • - 1 g of yeast
  • - A pinch of salt

For the chocolate glaze:

  • - 130 g of dark chocolate
  • - 250 g of water
  • - 125 g cream
  • - 70 g of granulated sugar

For the filling:

  • - 400 g of custard

Procedure:

    First prepare the paste choux by melting margarine in saucepan and once melted add the water, a pinch of salt and bring to a boil. After 30 seconds, remove from heat and pour the flour. Work with the spoon mix. Put on the heat and after less than two minutes the dough should separate from the sides of the pan. Pour into a bowl and knead with the help of a whisk or an electric mixer. After add just one egg at a time. The dough is now ready, pour it into the pastry bag and on a baking sheet coated with nonstick paper create some strips of dough, making sure there are no bubbles. Bake at 200 ° for about 20 minutes. Meanwhile, heat the water and add the cream and the chocolate into small pieces. Work with a hand whisk everything adding white sugar . Fate so that everything melts, so you get a smooth and shiny glaze. Put in a plastic bowl and kip it in the freezer pour the glaze is still warm. Of course you can prepare glazes of different colors making sure to always use natural ingredients in food. When the Èclair are ready and cold, stuff them with custard.
