  • - Rice flour 180 gr
  • - Gluten-free potato starch 30 g
  • - Eggs 3
  • - Extra-virgin olive oil 70 ml
  • - Water 60 ml
  • - Sugar 45 gr
  • - ½ apple
  • - Grated zest of one lemon
  • - Yeast ½ sachet
  • - Jam


Mix the egg yolks and sugar with the lemon zest, then add the oil and water mixing thoroughly.
Add the egg whites until stiff, resulting in a creamy mixture, add the flour, potato starch, grated apple puree and half a bag of yeast. In each muffin paper cups pour a table spoon of dough, then a teaspoon of jam and cover with additional dough. Bake gluten-free muffins for about 20 minutes at 180 ° in David World ovens for gluten-free products.
