GLUTEN-FREE PIZZA WITH VEGETABLES RECIPE

GLUTEN-FREE PIZZA WITH VEGETABLES RECIPE

Ingredients:

  • -vegetables of your own choice (we suggest: 1 zucchini, 1 red pepper, 1/2 aubergine)
  • -225 grams gluten-free flour
  • -40 ml of milk
  • -40 ml of water
  • -2 Tablespoons olive oil
  • -1 Teaspoon dried yeast
  • -1 egg
  • -1 / 2 teaspoon salt
  • -1 Teaspoon lemon juice
  • -75 grams mozzarella

Preparation

Preheat oven to 200 ° C.
Cut the aubergines into slices, zucchini and peppers into strips, then cook them on a hot grill. Once grilled serve them with a drizzle of olive oil and salt.

To prepare the batter whisk the mixture of milk and hot water with lemon juice, 2 tablespoons of olive oil, egg and salt.
Stir in the flour and the yeast, mix well until the mixture is clearly consistent.

Pour the batter directly into a previously oiled pizza mold, cover with a damp tea towel and let rise in a warm place for 20 minutes.

Cooking

Bake for 10 minutes until the mixture has thickened, then remove it from the oven and distribute the grilled vegetables and mozzarella cheese, cut into cubes.
Add a little olive oil and put in the oven for another 10 minutes.
