Pumpkin Pie

The scariest night of the year is coming, children around the world are ready to celebrate to the sound of "trick or treat", this is Halloween. Halloween, the anniversary of ancient Anglo-Saxon origin, has its roots in the far north of Europe but takes on the meaning of holiday spirit only in more recent times. Its name, in fact, comes from the Scottish All-Hallows-Eve, or the night before All Saints' Day and its spread not stood before the year 1556.  Forni David for the occasion has decided to tell you the recipe of Pumpkin Pie, the real star of this festival along with other forms of masks. Ingredients for the dough:

  • - Sugar 200g
  • - Sale q.s.
  • - Butter 250g
  • - 00 flour, 500 gr
  • - Vanilla essence, the tip of a teaspoon
  • - 4 egg yolks

Ingredients for the filling:

  • - Brown Sugar 70 g
  • - 1 large egg
  • - Fresh Cream 180 ml
  • - Cinnamon q.s.
  • - Nutmeg powder q.s.
  • - Ginger q.s.
  • - Pumpkin already cleaned 800 g
  • - Melted chocolate to decorate

Preparation:

To begin, prepare the pastry. With the help of a mixer knead the butter cold from the fridge, flour and a pinch of salt and whisk quickly until the mixture is the consistency of fine sand. Transfer the whole thing on a board and formed the classic fountain, add now icing sugar, vanilla extract and egg yolks. Knead with your hands for a few minutes. Therefore formed a ball, wrap with plastic wrap and put it to rest in the refrigerator for at least half an hour. Meanwhile, prepare the pumpkin soup. Peel the pumpkin, take away the internal seeds and peel, then cut into pieces and put it to cook in a preheated oven at 200 degrees, covered with aluminum foil until it appears soft enough to be worked. After the standing time, remove the pastry from the refrigerator, transfer on floured surface and roll it out with the help of a rolling pin. Obtained a disk with a thickness of 5mm and roll it on the mold previously greased and floured cake. then roll it into a mold 26 cm, greased and floured. Prick the bottom of the pastry and pour the pumpkin soup. Bake at 200 ° for the first 20 minutes and then at 180 ° for another 30 min. Once finished cooking, remove from the oven and let it cool.
