Rainbow Cake

The rainbow cake is the perfect dessert to celebrate, slice after slice, the most important day of your child. This pie is a real explosion of brilliance, colours and happiness. Ingredients

For the base colours:

  • - 10 eggs average
  • - 250 ml liquid cream
  • - 30 g honey
  • - 300 g flour type 00
  • - 420 g caster sugar
  • - 1 berry vanilla
  • - 12 g baking powder powder
  • - Food colouring paste or gel: orange, red, blue, green, yellow, purple

For the yogurt cream:

  • - 1250 g greek yogurt
  • - 170 g icing sugar
  • - 1 berry vanilla
  • - 40 g gelatin sheets
  • - 500 ml liquid cream

Procedure:

You start preparing the yogurt cream. Soak the gelatine leaves in a bowl of cold water for at least 10 minutes. Meanwhile, in another bowl, pour 400 ml of liquid cream, add the seeds of vanilla and the icing sugar. Whip the cream with an electric mixer. Drain and squeeze the gelatine, pour into a bowl with 100 ml cream previously heated: stir with a spoon and completely melt the gelatin. Then pour the cream warm where you have dissolved the gelatin into the bowl with the whipped cream and mix the two compounds gently with a spatula. United greek yoghurt and mix together until you have a smooth paste. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to firm up. Meanwhile, separate the egg yolks from the whites and pour the egg yolks in the bowl of a planetary (you can also use an electric mixer) with honey and seeds of a vanilla bean. Operated whips and add half of the doses of sugar. When the mixture is light and fluffy, put into a large bowl and add the cream very gently; stir with a whisk or a wooden spoon and set aside. Beat the egg whites until stiff; when they turned white, add the remaining half of sugar and continue beating. Combine the egg whites to the egg mixture, stirring from top to bottom not to dismantle them; sift the flour and baking powder, mix thoroughly with a wooden spoon the mixture and divide into 6 bowls. In each bowl, add the dye in gel or paste, putting little at a time until you get the perfect color: red, yellow, green, orange, purple and blue. Melt it with a spoon of water. On a baking tray lined with baking paper, lay a circle pastry of 18 cm in diameter (you can also use a round mould of the same size) and pour the mixture coloured; cook a base at a time in a preheated oven at 200 ° for about 10 minutes (fan oven 180 ° C for about 5-6 minutes). Once baked the sponge cake, take out of the oven and detached from the edge of the cake with the aid of a knife, gently parades circle. Continue the same way for all the coloured bases. When the bases is cooked and they have cooled completely, compose the cake: a platter resting on the red base, created a layer of yoghurt cream an create a concentric circles with the sac-a-few in plain nozzle; Continue alternating layers of sponge cake and cream creating the rainbow: after the red base, the yellow, then the green, the purple and finally the blue. Coated around the perimeter of the cake with yogurt cream advanced and always with the yogurt cream decorated with tufts or other designs of your choice. The rainbow cake is ready: you can store it in the refrigerator to firm up before serving. To make this cake even more magical and imaginative, you can add coloured tails to garnish the surface!
