  • for the filling and the topping:

To prepare the dough you have to combine oil and water in a bowl and melt in the salt; pour the mixture into the planetary with hook leaf and started to pour the flour mixing at medium speed until dough is firm and elastic. Let stand it for at least two hours wrapped in plastic film. After this time, remove the dough from the film, divide it in half and roll out the two sides first with a rolling pin and then with floured hands until it is as thin as possible. The dough will get to have a thickness of about 2 mm. Try not to pierce it, otherwise, during cooking the cheese splashing and then burning. Lay the first half of the dough obtained in a pan, previously greased with oil, and put on the cheese in pieces not too small. Once you have placed all the cheese, cover the crescenza with the second dough and close both ends for good, cutting the extra dough that comes out of the pan. Now you have to pierce the surface of the dough, then brush it with olive oil and sprinkle it with a little salt. Bake it at 250 degrees for 10-15 minutes until your focaccia will have a nice golden color. Enjoy your meal!
