Really miss a few days to Christmas, the race last purchases continues and it is time to think about the Christmas Eve dinner during which the family is around the table of the festivities. Forni David to wish you a tasty feast has decided to tell a Tuscany dessert: Ricciarelli. Typical of Siena, the legend tells that the recipe was of Arab origin and the count Ricciardetto Gherardesca introduced it in Italy after the return from the Crusades, around the 14th century. Since then every city and town in Tuscany has developed its own version. Tasty and fragrant will certainly win over your guests and cooking will be tight and crisp thanks to the David Progress Electric Modular Deck Ovens and David World Single Chamber Ovens.

Ingredients

  • - 500 g of almond flour (or whole almonds already peeled)
  • - 500 g caster sugar
  • - 3 egg whites
  • - Powdered sugar (to sprinkle q.s.)

Procedure:

    Blanch the almonds in boiling water in order to peel them easily. Shake it up to create a rather fine almond flour. Stir the almond flour with sugar and then add the whites of eggs. Once you have a smooth and compact paste, wrap it in a cloth and let rest in the refrigerator for at least 12 hours. One the time is passed put away, roll out the dough with a rolling pin and shape as Ricciarelli, with the aid of special oval moulds. Lay them on a baking sheet covered with parchment paper and bake at 150 ° C for about 10 minutes. The cooking of Ricciarelli must be homogeneous and delicate, so you can keep the oven at a lower temperature and increasing the minutes of cooking. Once cooked, let cool thoroughly and sprinkle cookies with icing sugar.
