TRICOLORE PIZZA WITH STUFFED EDGES

For all lovers of salty recipes Forni David offers a recipe that contains all the colors and flavours of Italy: the Pizza Tricolore with the stuffed edges. Realize it is very simple, even if the rising times are long enough, but the success is assured thanks to David Progress Electric Modular Deck Ovens, which provide the same quality of a product cooked in a wood oven, with typical power consumption of the oven gas. Ingredients for 4 pizzas:

  • - ½ kg of flour
  • - 300 g of water
  • - 1 cube of fresh yeast
  • - 15 g salt
  • - 5 g of sugar
  • - 15 ml of sunflower oil
  • - 150 g of cooked ham
  • - 250 g of cottage cheese
  • - 200 ml of tomato sauce
  • - 250 g of mozzarella
  • - salt q.b
  • - extra virgin olive oil to taste
  • - basil q.b.

Procedure:

Dissolve the yeast in the warm water add the flour, sugar, salt and oil sunflower seeds by mixing very well in a glass bowl. The processing must be manually and accurately, so as to ensure a soft dough, elastic and smooth. Wrap the dough in cling film and leave to rise in a container for about 3 hours, until it has almost doubled in volume. When risen, will be able to make 4 loaves of 200 grams each, which will have to rest in a dry place away from sources of heat for about 3 hours. In the meantime, you can proceed with the preparation of the filling. Cut the mozzarella into cubes. Cut the ham into small cubes and incorporate the ricotta cheese. Season the tomato sauce with a little touch of olive oil and salt to taste. At this point, gently roll out the dough into 4 round pans, lightly greased before with extra virgin olive oil, coming up with your fingers until the edges, which will come out of the pan. Arrange the ham and cheese along the perimeter of pizza, a short distance from the edge. Fold the dough on the compound with a slight pressure. Preheat oven to 200 ° C. Add the tomato sauce to cover the entire pizza, stuffed edges included. Cook for about 15 minutes. At this point add the cheese, well drained from his serum and cook for another ten minutes, lowering the oven temperature to 180 ° C. At the end of cooking, add a drizzle of extra virgin olive oil and a few leaves of fresh basil. Now your pizza will be streamlined and perfect for cheering Italy in good company!
